you can ask question in way, what difference between flat files , raw files in ssis
a flat file ordinary file text in it: .txt file, .csv file , on. can read them using text editor. must add flat file connection manager use them.
a raw file dump of data in ssis file system. done in proprietary binary format, can't read them yourself. used reading/writing data between different stages in etl. , ther no need connection manager use them.
